Chocolate Maker, Pastry Chef

One must remain an eternal apprentice, because the apprentice is the one who looks at what they do every day with the curiosity of someone doing it for the first time.

Yuri Cestari is a faculty member at CAST, where he teaches in the Advanced Pastry Training courses, including Professional Pastry Chef, Restaurant and Hotel Pastry, and Advanced Chocolate Making. He also plays a key role as Internship Tutor, guiding students through their hands-on, professional training journey.

In collaboration with the Academic Office, he designs and leads Specialization and Master programs focused on the world of chocolate, as well as Italian Pastry courses tailored for international students.

While chocolate is his area of expertise, Yuri’s curiosity has driven him to explore and deepen his knowledge across various fields of pastry, including restaurant and hotel pastry. His approach is both technical and scientific, with a strong emphasis on teaching not just the how, but most importantly the why behind each process.

His professional background is enriched by collaborations with leading industry companies such as Barry-Callebaut and Roboqbo, which have allowed him to develop skills on an international scale. Today, he continues to work with major companies on research and development projects, while also providing professional training both nationally and internationally.

In addition to teaching and curriculum design, he also coordinates the organization of events and pastry-focused cooking shows, regularly participating in major industry trade fairs such as SIGEP, HOST, and CIBUS.
